This Grilled Peach and Arugula Salad is a delicious, beautiful, vibrant dish that captures the essence of August in California. It’s perfect for a light lunch or a side dish for a summer barbecue.
Grilled Peach and Arugula Salad
Ingredients
Preparing the Balsamic Vinaigrette
- 1/4 cup Balsamic vinegar
- 1/2 cup Extra-Virgin Olive Oil
- One tablespoon of Dijon Mustard
- One teaspoon Honey
- One Garlic Clove, minced
- Salt and Pepper to taste
Other Ingredients
- Four ripe Peaches, halved and pitted
- Four cups of Baby Arugula
- 1/2 cup crumbled Goat Cheese
- 1/4 cup chopped toasted Walnuts
- Salt and Pepper to taste
- Balsamic Vinaigrette
Directions
- Preheat the grill to medium-high heat. Brush the peach halves with olive oil and season with a pinch of salt and Pepper.
- Grill the peaches cut-side down for about 3-4 minutes or until grill marks appear. The peaches should be slightly softened. Remove from the grill to cool slightly.
- Combine the baby arugula, crumbled goat cheese, and chopped toasted walnuts in a large bowl.
- Pour the Balsamic Vinaigrette over the arugula mixture and toss gently to coat.
- Arrange the grilled peach halves on top of the salad.
- Drizzle a little more Balsamic Vinaigrette over the peaches.
Serve immediately and enjoy the burst of flavors in this refreshing summer salad! Enjoy!
